About Crabapples, raw

The crab apple (genus Malus) is the small, tart fruit of wild and ornamental apple trees, the diminutive cousin of the orchard apple and an ancestor of many cultivated varieties. Rarely larger than a cherry or golf ball, crab apples come in shades of red, yellow, and green and are famously sharp, sour, and astringent when raw, far too tart for most people to enjoy out of hand. What they lack in sweetness they make up for in pectin and bright acidity, which makes them prized for cooking.

Crab apples provide vitamin C, fiber, and antioxidants. They are simmered with sugar into rosy jellies, jams, and preserves that set beautifully without added pectin, pickled or spiced as a relish for meats, and pressed into juice and country wines. Their blossoms also make the trees beloved ornamentals. Gather firm, unblemished fruit in autumn, and store crab apples in a cool place or the refrigerator until you cook them.
