About Sugars, brown

Brown sugar is, in most cases, refined white sugar with some molasses stirred back in, which gives it its damp texture, caramel notes and golden-to-dark color. It's the sugar of choice for cookies, barbecue rubs and anything that wants a hint of toffee.

Despite the wholesome color, it's nutritionally almost identical to white sugar — the molasses adds only trace amounts of minerals like calcium, potassium and iron, far too little to matter. It's still essentially pure sugar, with the same calories and the same effect on the body.

Brown sugar brings flavor and moisture that white sugar doesn't, which is why recipes call for it specifically — but as a 'healthier' sugar it's a myth. It's a sweetener, best used in the same moderation as any other.
