About Sourdock, young leaves (Alaska Native)
Sourdock (Rumex arcticus), also called Arctic dock, is a hardy wild green native to Alaska and the far north, long an important traditional food for Alaska Native peoples such as the Yupik. Its broad, tender leaves have a bright, tangy, lemony sourness, the same pleasant tartness found in garden sorrel, thanks to natural oxalic acid. Gathered in summer, the leaves are eaten fresh and cooked, and they are a signature ingredient in akutaq, the whipped Alaskan dish sometimes called Eskimo ice cream, as well as in soups and greens dishes.
As a leafy green, sourdock supplies vitamin C, vitamin A, and other nutrients, and its refreshing sour flavor made it especially valued in regions with few tart fruits. Because of its oxalic acid it is best enjoyed in reasonable amounts, and cooking softens both texture and tartness. Its lemony bite brightens rich northern dishes. Choose fresh, unblemished green leaves, and use them soon after gathering, refrigerating them briefly wrapped or preserving them by freezing or traditional methods, as the tender leaves wilt quickly.
