About Smelt, dried (Alaska Native)
Smelts are a family of small, slender, silvery fish (Osmeridae) found in the cold coastal waters and rivers of the Northern Hemisphere, with the rainbow smelt the best known. Usually just a few inches long, they have soft, oily flesh with a mild, faintly cucumber-like aroma when very fresh and a rich, slightly sweet flavor. As an oily little fish eaten whole, smelt is a good source of protein, omega-3 fatty acids, calcium from the soft edible bones, vitamin B12, and vitamin D.
They are most often cleaned, dredged in seasoned flour or batter, and pan-fried or deep-fried whole until crisp, then eaten head, bones, and all with a squeeze of lemon, a beloved treat around the Great Lakes and across Europe and Japan.
