About Oil, babassu
The babassu palm (also spelled babacu, and known as cusi) is a towering palm native to the Amazon and especially abundant in the Maranhao and Piaui regions of northern Brazil, where whole communities have gathered its harvest for generations. Its greatest food value lies in the hard-shelled seeds, which are pressed into babassu oil, a pale, nearly odorless edible oil high in saturated fats much like coconut oil; it stays solid at room temperature and is used for cooking and frying as well as in soaps and skin care.
The fruit's starchy inner flesh is also ground into a nutritious flour, sold as a supplement and stirred into porridges, drinks, and baked goods, especially among the traditional coconut-breaker communities famed for cracking the tough nuts by hand. Little of the palm goes to waste, as the leaves thatch roofs and the trunks provide timber. Babassu flour is naturally gluten-free and rich in fiber. As an ingredient it is prized much like coconut, lending richness to both sweet and savory dishes across its home region.
