About Jellyfish, dried, salted

Edible jellyfish, prepared dried and salted, is a traditional ingredient in Chinese and other East Asian cuisines, where it is prized almost entirely for its unusual crunchy-yet-elastic texture rather than its taste, which is very mild. After soaking and shredding, it is most often served cold, dressed with sesame oil, vinegar and soy in a refreshing salad.

In this dried, salted form jellyfish is very low in calories — about 36 per 100 grams — with a little protein and almost no fat. There is, however, one figure that dominates everything else: sodium. The salting used to preserve it pushes the sodium content to extreme levels, well over 9,000 milligrams per 100 grams, several times a whole day's recommended limit.

Because of that, dried jellyfish must always be soaked and rinsed thoroughly in several changes of water before eating, which removes much of the salt and rehydrates the crunchy texture. Even so, it is best treated as an occasional, lightly-used ingredient rather than an everyday food, particularly for anyone watching their sodium intake.
