Sheefish, also called inconnu (Stenodus), is the largest member of the whitefish clan, a sleek, silvery giant of far-northern rivers and lakes in Alaska and Siberia. A prized catch for subsistence and sport anglers alike, it can reach impressive size, and its pale, firm flesh has earned it the nickname "tarpon of the north" for the fight it puts up. On the plate, sheefish is mild, rich, and a little oily, which makes it excellent smoked, grilled, baked, or served raw in a fresh, ceviche-style dish in the communities that harvest it.
As an oily northern fish, it delivers plenty of protein along with heart-healthy omega-3 fatty acids, vitamin D, and vitamin B12. The flesh has fine bones, so filleting takes a little care.
