About Carambola, (starfruit), raw
Carambola, far better known as starfruit, is a waxy yellow-green tropical fruit that slices crossways into perfect five-pointed stars — which is most of its appeal. The whole thing is edible, skin and all, and the taste runs from tart and grassy when underripe to mildly sweet, juicy and faintly floral when fully yellow.
It is a light fruit at around 31 calories per 100 grams, mostly water with a modest amount of fiber and a useful hit of vitamin C. Its main job in the kitchen is decorative and refreshing rather than filling, scattered over salads and desserts or pressed into juice.
One important caveat: starfruit contains oxalates and a natural compound called caramboxin that healthy kidneys clear easily but that can be dangerous for people with kidney disease, sometimes causing serious symptoms even in small amounts. Anyone with reduced kidney function should avoid it.
