Giant butterbur (Petasites japonicus), known in Japanese cooking as fuki, is a leafy wetland plant of East Asia grown for its long, crisp, celery-like leaf stalks and its edible flower buds. The pale green stalks have a refreshing, slightly bitter, herbaceous flavor and a satisfying crunch, while the early-spring flower buds, called fukinoto, are prized as one of the first wild vegetables of the season.

Fuki is very low in calories and provides fiber and minerals. The stalks must be prepared before eating, typically parboiled and the stringy outer skin peeled away to remove bitterness, after which they are simmered in soy and dashi, stir-fried, or pickled. The aromatic flower buds are battered and fried into tempura. A traditional Japanese spring vegetable, fuki should be cooked rather than eaten raw.
