Cooking wine is wine made for the kitchen rather than the glass. Sold alongside the vinegars, it is used to deglaze pans, build sauces and add depth to braises and stews. What sets it apart from drinking wine is the added salt, included both as a preservative and to keep it from being sold as a beverage.
The calories are modest, around 50 per 100 grams, and it is low in alcohol — most of which cooks off anyway. The number that stands out is sodium: at roughly 626 milligrams per 100 grams it is very salty, so a generous splash can add a noticeable amount of salt to a dish, which is worth remembering when you season the rest of the recipe.
