Sapodilla is a small brown tropical fruit with sandy-brown skin and soft, grainy, amber flesh whose flavor is often likened to brown sugar, malt or a pear soaked in caramel. Native to southern Mexico and Central America, it must be fully ripe to enjoy — unripe fruit is mouth-puckeringly astringent.
