About Quinces, raw

The quince is an old-fashioned fruit that looks like a knobbly cross between an apple and a pear and fills a room with a heady, floral perfume as it ripens. Raw it is almost inedible — hard, dry and astringent — so it is one of the few fruits that genuinely has to be cooked to be enjoyed.
