About Pummelo, raw
The pomelo (Citrus maxima), also spelled pummelo, is the largest of all citrus fruits and, along with the mandarin, an ancestor of the grapefruit. Beneath its thick, pale-green to yellow rind and an unusually deep layer of spongy white pith lies sweet, mild flesh in shades of pale yellow to rosy pink, far less bitter and acidic than grapefruit. Pomelos are rich in vitamin C and supply fiber and potassium for few calories, only about 70 in a cup of segments.
Because the pith and membranes are thick and bitter, the fruit is usually peeled deeply and the juicy segments freed from their tough skins before eating, which yields firm, crunchy little juice sacs that hold their shape. Popular across Southeast Asia and China, where it is a symbol of abundance and good fortune at Lunar New Year, the pomelo is enjoyed fresh, tossed into the Thai salad yum som-o, dipped in chili salt, or made into marmalade, while the peel is candied.
Choose a fragrant fruit that feels heavy for its size, and store it at room temperature for about a week or chilled for longer.
