About Plains Pricklypear, broiled (Northern Plains Indians)

The plains prickly pear is a low, sprawling cactus native across the Great Plains and western United States, from Texas to Minnesota and out into the desert Southwest. Like other Opuntia cacti it offers two edible harvests: the flat green pads, known as nopales, and the sweet red fruits, called tunas or prickly pears. The pads are stripped of spines and cooked as a tender, slightly tart vegetable in Mexican and Southwestern cooking, while the juicy crimson fruits are eaten fresh or turned into jelly, syrup, candy, and drinks.

Both are low in calories and provide fiber, vitamin C, magnesium, and the same betalain pigments that give the fruit its vivid color. The plant bears showy bright yellow flowers before setting fruit, and it thrives in dry, sandy, sun-baked soils where little else grows. Handle it carefully: singe or scrape off the tiny barbed glochids before eating either the pads or the fruit.
