About Jerusalem-artichokes, raw
Despite the name, the Jerusalem artichoke (Helianthus tuberosus) has no link to Jerusalem and is not an artichoke. It is the knobby underground tuber of a sunflower native to North America, which is why it also goes by sunchoke and sunroot. The lumpy, ginger-shaped tubers wear a thin tan skin over crisp, ivory flesh, and their flavor is sweet and nutty with a real echo of an artichoke heart.
