About Fish, devilfish, meat (Alaska Native)

Devilfish is a common name for the large sculpins of the genus Myoxocephalus, sturdy, big-headed bottom fish found in the cold coastal waters of the northern Atlantic and Pacific. With their spiny heads and wide mouths they look fearsome, but beneath the armor lies firm, sweet, white flesh that eats much like other lean whitefish. Long a subsistence and folk food in northern fishing communities, sculpin is caught close to shore and prepared simply, poached, fried, or simmered into hearty fish soups and stews where its lean meat holds its shape.
