About Fish, blackfish, whole (Alaska Native)
The Alaska blackfish (Dallia pectoralis) is a small, hardy freshwater fish of the tundra ponds, streams, and marshes of Alaska and the Bering Sea region, rarely growing longer than about seven inches. Famous for surviving the brutal Arctic winter in near-frozen water, it has long been an important traditional food for Alaska Native peoples, especially the Yupik, who netted and trapped it in the fall and kept it frozen through the winter.
Its small, lean body yields mild, soft white flesh that is typically cooked simply, boiled or fried, and eaten whole or added to soups and stews as a dependable cold-weather protein. Like other lean freshwater fish, blackfish supplies high-quality protein, B vitamins, and minerals with very little fat. It remains a subsistence and cultural food gathered close to home rather than a commercial catch.
Because the fish is small, it cooks in minutes. Choose very fresh or well-frozen blackfish that smells clean and lake-fresh, keep it cold, and cook it soon after thawing for the sweetest, freshest flavor.
