About Chiton, leathery, gumboots (Alaska Native)

The black leather chiton, also known as the black Katy chiton, is a large marine mollusk that clings to wave-battered rocks along the cold Pacific coast from Alaska to California. Recognized by the band of shiny black leathery skin that wraps around its eight overlapping shell plates, it has long been an important traditional food for Indigenous peoples of the Pacific Northwest, who gather it at low tide.

The edible part is the muscular orange foot, pried from the shell and eaten raw, boiled, or fried; it has a firm, chewy texture and a mild, briny shellfish flavor that rewards quick cooking or a good pounding to tenderize it. Like other shellfish, chiton offers lean protein and minerals from the sea. It remains more of a foraged coastal delicacy than a market item. Harvest only where waters are clean and shellfish are safe to gather, respect local rules and seasons, keep the catch very cold, and cook or eat it promptly for the best texture.
