The narrowleaf cattail is a tall wetland plant of marshes, ditches, and pond edges across the Northern Hemisphere, easily recognized by its slim, sword-like leaves and the brown, sausage-shaped seed heads that give the whole cattail family its name. It is one of the most useful wild edibles, offering something to harvest in nearly every season: the tender inner core of young spring shoots, sometimes called Cossack asparagus, is eaten raw or cooked like a vegetable; the green flower spikes can be boiled and nibbled much like corn on the cob; the abundant yellow summer pollen is used as a protein-rich flour; and the starchy rhizomes are roasted or ground for their carbohydrate.
Together these parts supply energy, fiber, and minerals from a plant that grows wild and free. It spreads by thick creeping roots and can form dense stands in brackish and fresh water. Harvest cattails only from clean water, since the plants readily take up pollutants from the mud they grow in.
