About Agave, cooked (Southwest)

Agave is a genus of striking rosette-forming succulents native to the hot, arid regions of the Americas, especially Mexico, long central to the food and culture of the region. Its most famous culinary gifts come from the plant's sweet sap and dense core: the sap is processed into agave nectar, or agave syrup, a mild, honey-like liquid sweetener popular as an alternative to sugar and honey, while the roasted heart of the blue agave is fermented and distilled into tequila and mezcal.

The plant's sweetness comes largely from fructans, which give agave nectar a low glycemic impact, though it is still a concentrated sugar to use in moderation. In traditional Mexican cooking the roasted heart, or pina, is eaten, and the flowers and sap have long been foods. Agaves are also grown as dramatic ornamentals and a source of fiber. Agave nectar dissolves easily, making it handy in drinks and dressings.

Choose pure agave nectar without added sugars, and store it in a cool, dry pantry, where the syrup keeps well for a long time.
