About Mollusks, snail, raw

Edible land snails — served as escargot in French cooking — are a traditional delicacy with a mild, earthy flavor often compared to a cross between mushrooms and mussels. Famously they are a vehicle for what surrounds them: the classic preparation drowns them in garlic-and-parsley butter, baked bubbling in their shells or in a special dimpled dish.

Snail meat itself is very lean and protein-rich, with about 90 calories per 100 grams raw, roughly 16 grams of protein and a little over a gram of fat. It is a good source of iron, magnesium, selenium and phosphorus. Most of the calories in a finished plate of escargot come from the butter, not the snails.

Snails sold for eating are farmed or purged and cleaned before cooking — they should never be gathered casually from the garden, as wild snails can carry parasites and must be properly raised and prepared. Beyond the buttery French classic, they are stewed, grilled and added to tapas and stews around the Mediterranean.
