About Peppers, poblano, seeded, raw
The red bell pepper is the fully ripened form of the sweet bell pepper, a heatless cultivar of Capsicum annuum that has been left on the plant to mature from green through to deep red. That extra time on the vine transforms it, mellowing the grassy edge of the green pepper into a candy-like sweetness and deepening the color. Ripeness pays off nutritionally too: red bells are loaded with vitamin C, often more than an orange, and are rich in vitamin A and the antioxidant beta-carotene along with lycopene, all for very few calories.
Their sweetness makes them a favorite roasted until the skins blister and slip off, then peeled and dressed with oil and garlic, and they shine in salads, sauces, hummus, stir-fries, and stuffed pepper dishes. Look for firm, heavy peppers with tight, wrinkle-free skin, and keep them in the refrigerator crisper drawer, where they hold for about a week.
