About Pectin, liquid

Pectin is a natural, soluble fiber found in the cell walls of plants, most abundantly in the peels and cores of apples and in citrus rinds. It is best known as the gelling agent that makes jams, jellies, and preserves set, forming a thick gel when cooked with sugar and acid. Sold as liquid or powder, and in regular and low-sugar forms, it lets home and commercial cooks turn fruit into spreadable preserves reliably, and it also thickens fillings, glazes, and confections like gummies and fruit pastes.
