About Mashu roots, raw (Alaska Native)
Alpine sweetvetch (Hedysarum alpinum) is a hardy wild legume of the far north, growing across the tundra, taiga, floodplains, and grasslands of Alaska, Canada, and the circumpolar Arctic. Its real food value lies underground: the thick, fleshy taproots have long been an important traditional food for Alaska Native peoples such as the Dena'ina and Inupiat, who call it wild potato and prize the roots second only to wild berries.
The roots are said to taste like young carrots, sweet and starchy, and are eaten raw or, more often, boiled, roasted, or fried, and were traditionally stored in oil or fat as a winter food that also supplies dietary fiber. The plant sends up erect stems topped with pink to pale-purple flowers, and its roots feed grizzlies, caribou, and other wildlife too. A note of caution: foraging wild roots demands expert identification, since sweetvetch can be confused with related plants and its seeds are not regarded as food.
Anyone gathering it should learn the plant from an experienced forager. Harvest the roots and use them fresh, or store them the traditional way in fat, cooking them well before eating.
