About Eppaw, raw

Oregon yampah, Perideridia oregana, is a wild edible plant in the carrot family, one of the yampahs long valued as a food by Indigenous peoples of western North America. Its small, tuberous roots are the prize, carrying a sweet, nutty, faintly carrot-like flavor that made them a staple traditional food, eaten raw, boiled, or roasted, and dried and ground into meal or flour for baking and thickening.

The plant also produces aromatic seeds that can be used as a spice much like caraway or cumin. As a starchy root, yampah provided valuable energy and some minerals to the diets that relied on it. A serious word of caution applies, though, because yampah grows among deadly poisonous relatives such as poison hemlock and water hemlock, so it must never be foraged without expert identification. Where it is harvested responsibly, the tubers are cleaned and cooked much like small root vegetables.

Only roots identified with certainty should be gathered, and they are best kept cool and dry and used within a few days of digging.
