About Spices, pepper, red or cayenne

Cayenne is the fiery red spice ground from dried hot chilli peppers — pure heat in powdered form, used by the pinch to bring a clean, building burn to everything from gumbo and curries to a dash in hot chocolate.

Used in such small amounts it adds negligible calories, but it's the home of capsaicin, the compound responsible for chilli heat and the subject of much research into metabolism, pain relief and appetite. As concentrated dried pepper it's also rich in vitamin A and carries antioxidants.

A little cayenne goes a very long way — it's a spice to add cautiously and taste as you go, since its heat builds and is far easier to add than to take back.
