About Egg rolls, chicken, refrigerated, heated

The egg roll is a crispy, deep-fried appetizer wrapped in a thick, bubbly wheat skin and stuffed with shredded cabbage, carrots, and often pork, shrimp, or chicken. A fixture of American Chinese restaurant menus, it grew out of the Chinese spring roll but turned larger, crunchier, and heartier, with a distinctive blistered shell that shatters when you bite in. Egg rolls are usually served hot with duck sauce, hot mustard, or sweet chili sauce for dipping.

Because they are fried, they run fairly high in calories and fat, while the vegetable and meat filling adds some protein, fiber, and vitamins. The wrappers, sometimes made with egg, are rolled snugly around the filling and fried until deep golden brown. They freeze well uncooked and can be air-fried or baked for a lighter take. Eat egg rolls fresh from the oil while the outside is still shatteringly crisp, because they soften as they sit.
