About McDONALD'S, Honey

Honey is a natural sweetener made by honeybees from flower nectar, which they gather and concentrate into a thick, golden syrup stored and capped in the honeycomb. Its color and flavor depend on the flowers the bees visit, ranging from pale, delicate clover and orange-blossom honey to dark, robust buckwheat and the prized New Zealand manuka. Made up mostly of the sugars fructose and glucose, honey is sweeter than table sugar, so a little goes a long way, and it brings trace antioxidants, enzymes, and a floral complexity that plain sugar cannot match.

It sweetens tea, drizzles over yogurt and toast, glazes hams and roasted vegetables, and, as a natural humectant, keeps baked goods moist, and it is famously fermented into the ancient drink mead. Raw honey is minimally filtered, while most supermarket honey is gently pasteurized for a smooth pour. Honey keeps almost indefinitely and may crystallize into a grainy solid over time, which gentle warming easily reverses.

One important caution: honey should never be given to infants under one year old, because of the risk of botulism.
