Khorasan wheat (Triticum turgidum ssp. turanicum), also known as Oriental wheat and sold under the trademark Kamut, is an ancient grain named for a historical region spanning modern Iran and Afghanistan. Its plump kernels are about twice the size of modern wheat and instantly recognizable, with a rich, buttery, nutty flavor and a firm, satisfying chew. As a minimally changed heritage grain, it has grown in popularity among people seeking wholesome, less-processed foods, and it delivers generous whole-grain nutrition, with more protein than common wheat along with fiber, selenium, zinc, magnesium, and B vitamins.
It is not gluten-free, so it is unsuitable for those with celiac disease, though some people find it easier to digest than modern wheat. The whole berries are cooked like rice for pilafs, grain bowls, and salads, and the grain is milled into flour for hearty breads and pasta. Soaking the berries shortens their cooking time.
