About Fish, shad, american, raw
The American shad (Alosa sapidissima) is the largest member of the herring family along the Atlantic coast of North America, an anadromous fish that lives at sea and returns to freshwater rivers each spring to spawn. Long a hugely important food fish whose spring runs were celebrated events, its very name means most delicious. The shad offers rich, flavorful, oily flesh and, especially prized, its roe, considered a seasonal delicacy.
As an oily fish it is an excellent source of protein and heart-healthy omega-3 fatty acids, along with vitamin D, B vitamins, and minerals. Its one challenge is a notoriously intricate set of fine bones, so it is traditionally deboned by skilled hands, or slow-baked and planked over a fire long enough to soften the bones, while the roe is gently sauteed in butter. Its richness pairs well with bright, acidic flavors.
Choose fresh shad or shad roe in spring with a clean scent and firm texture, and keep it well chilled, cooking it within a day or two of purchase.
