Summer savory (Satureja hortensis) is a fragrant annual herb with a peppery, thyme-like flavor and a hint of marjoram, milder and sweeter than its hardy perennial cousin winter savory. Long nicknamed the bean herb, and called Bohnenkraut in German, it has a special affinity for beans and lentils, deepening their flavor while traditionally helping make them easier to digest. It is a key player in the French blend herbes de Provence and a signature seasoning in Atlantic Canadian Acadian cooking, and it flavors sausages, stuffings, stews, grilled meats, soups, and egg dishes.

Summer savory provides antioxidant plant compounds and aromatic essential oils for almost no calories. Its flavor is more delicate than winter savory, so it can be added a bit more freely, though a light hand still suits its peppery punch, and it holds up better than many soft herbs to longer cooking.
