About Spices, allspice, ground

Allspice is the dried unripe berry of the Pimenta dioica tree, an evergreen in the myrtle family native to the Caribbean and Central America, and it earns its name because its flavor tastes like a blend of cinnamon, nutmeg, and cloves all at once. English merchants coined the name in the seventeenth century, and though it is sometimes called Jamaica pepper or pimento and resembles large brown peppercorns, it is a single spice rather than a mixture.

Jamaica remains the finest source. Sold whole or ground, the berries bring warm, sweet depth to both sweet and savory cooking, from pies, cakes, cookies, and mulled drinks to Caribbean jerk seasoning, Mexican mole, Middle Eastern stews, pickling spice, and sausages. Allspice is rich in antioxidant plant compounds, chiefly eugenol, the same warming oil found in cloves, and has long been valued as a digestive aid.

Grinding the whole berries fresh gives the most fragrant flavor, since pre-ground allspice fades over time. Store allspice in an airtight container away from heat and light to keep its aroma vivid.
