Hedge mustard is a wild edible plant in the cabbage family, native to Europe and North Africa and now naturalized around the world along roadsides, hedgerows, and waste ground. Despite the name, it is a different plant from the Brassica mustards that give us mustard seed, though it shares their peppery bite. The young leaves have a bitter, cabbage-like flavor and are eaten raw in salads or cooked down as a pot herb, especially in Northern Europe, while the small seeds have been ground into rustic mustard pastes to use as a condiment.
It earned the old nickname the singer's plant because herbalists once brewed it into a tea to soothe hoarseness and sore throats, a use that gave it a following among speakers and vocalists. The plant is low in calories and offers the vitamin C and minerals typical of wild greens. Gather the leaves young and tender in spring, before the plant bolts and the foliage turns tough and overly bitter.
