About Seaweed, agar, dried
Agar, also called agar-agar or kanten in Japan, is a natural gelling agent extracted from red seaweed and dried into flakes, powder, or translucent bars. Flavorless, odorless, and clear, it has been a staple of Asian cooking for centuries and is the classic plant-based, vegetarian and vegan alternative to animal gelatin. Agar is almost pure soluble fiber with virtually no calories, and, unlike gelatin, it sets firmer and holds its shape even at warm room temperature, so agar desserts do not melt in the hand.
To use it, dissolve agar fully in liquid and bring it to a boil, then simply let it cool to form a clean, sliceable gel. It sets Japanese sweets such as yokan and anmitsu, along with jellies, custards, panna cotta, and fruit terrines, and it works as a vegan thickener for soups and sauces. One caution: raw pineapple, kiwi, and papaya can interfere with any gel, though agar resists them better than gelatin.
Beyond the kitchen, agar is the standard growth medium in laboratories. Store agar in an airtight container in a cool, dry place, where it keeps almost indefinitely.
