About Onions, welsh, raw
The Welsh onion (Allium fistulosum) has nothing to do with Wales; the name traces back to an old word that simply meant "foreign." Also called the bunching onion, Japanese bunching onion, or green onion, it is a perennial allium grown for its long, hollow green stalks rather than a swollen bulb. Milder and sweeter than a common onion, it gives a fresh, gentle onion flavor and ranks among the most important seasonings in East Asian cooking, essential to Chinese, Japanese, and Korean dishes.
The whole stalk is used, sliced raw as a bright finish over noodles, soups, and rice, tossed into stir-fries, or grilled until soft and sweet. It supplies vitamin K, vitamin C, and antioxidants for almost no calories. Add it near the end of cooking to preserve its color and snap. Store Welsh onions loosely wrapped in the refrigerator, or stand the stalks upright in a glass with a little water, which keeps them crisp and can even coax fresh regrowth.
