About Nuts, beechnuts, dried

The beechnut is the small, edible nut of the beech tree (genus Fagus), borne in pairs inside a soft, spiny husk that splits open when ripe in autumn. Sharply three-sided and reddish-brown, the little nuts have sweet, oily kernels with a mild, pleasant flavor much like a delicate hazelnut. They do carry tannins and a bitter edge when raw, especially the skins, so they are best lightly roasted, which sweetens them and makes them easier to eat in moderation.

Beechnuts are rich in healthy fats, protein, and fiber, and they were traditionally pressed for a fine cooking oil. The roasted nuts are eaten as a snack, sprinkled over salads and baked goods, or ground into meal, and they have long been a favorite forage food for woodland animals. Gather plump, filled nuts after they drop, roast them before eating, and store beechnuts in a cool, dry place to keep their oils fresh.
