About Horseradish, prepared
Prepared horseradish is simply grated horseradish root mixed with vinegar and a little salt, which stops the grated root and sets its heat. It is the sinus-clearing condiment behind cocktail sauce and a classic partner to roast beef.
It is genuinely low in calories — only about 48 per 100 grams — and is used in small, pungent amounts, so it adds sharp flavor with very little to the calorie count. Its fiery kick comes from mustard-oil compounds released when the root is cut, the same family of compounds found in mustard and wasabi.
A spoonful livens up roast beef, seafood cocktails, sauces and dressings, and it is the base of the creamy horseradish sauce served alongside prime rib. The heat is volatile and fades with cooking, so it is best added near the end or used raw.
