Goat meat, called chevon from adult goats and kid or cabrito from young ones, comes from the domestic goat (Capra aegagrus hircus) and is the most widely consumed red meat on earth, a staple across Africa, the Middle East, South Asia, the Caribbean, and Latin America. Lean and firm, it has a slightly sweet, mild, grassy flavor less gamey than lamb. Because goat is naturally low in fat and calories yet high in protein, iron, potassium, and vitamin B12, it is one of the leanest red meats available.
Its low fat means it cooks best slow and moist, braised, stewed, or curried until tender, as in Jamaican curry goat, Indian and Pakistani goat curries, and Mexican birria, though tender cuts can be grilled or roasted with care to avoid drying out. Goat milk and cheese come from the same animal. Choose firm, pinkish-red meat, and store goat chilled, using fresh cuts within a few days or freezing them.
