About Fat, mutton tallow

Tallow is rendered beef or mutton fat, gently melted down and strained until it becomes a firm, creamy, shelf-stable cooking fat. Solid and waxy at room temperature, it has a high smoke point that makes it excellent for deep-frying, searing, and roasting, lending a rich, savory depth to food; classic British chips and many old-fashioned fries were once cooked in it. Tallow is mostly saturated and monounsaturated fat with no carbohydrates, and grass-fed versions carry fat-soluble vitamins along with a distinctive flavor.

A pantry staple long before industrial vegetable oils arrived, it has enjoyed a revival among cooks who prize traditional fats, and it also goes into pastry, tamale masa, candles, soap, and skin balms. A little goes a long way. Because it resists spoiling, tallow keeps for months in a sealed jar in a cool, dark cupboard, and even longer in the refrigerator.
