About Dulce de Leche
Dulce de leche is a thick, golden caramel made by gently cooking milk and sugar together until it darkens and turns spoonably thick. Hugely popular across Latin America, it is used as a spread, a filling for pastries and cookies, and a topping for ice cream and flan. Because it is milk-based rather than built on butter or chocolate, it is lower in fat than most caramels.
Per 100 grams dulce de leche provides about 315 calories — lower than chocolate confections — with roughly 55 grams of carbohydrate, around 50 grams of it sugar, and only about 7 grams of fat. The milk it is made from leaves behind a genuinely useful amount of calcium, near 250 milligrams per 100 grams, plus some protein and potassium. A 2-tablespoon serving of about 40 grams comes to roughly 125 calories and 20 grams of sugar.
It is still very much a sweet — about half its weight is sugar — so a little goes a long way. But for a caramel it is comparatively light on fat, and the milk base means each serving brings along some calcium and protein rather than sugar alone.
